Mains dimming comes in 2 forms, namely Leading Edge and Trailing Edge. By chopping up the AC voltage waveform in effect the mains dimmable LED drivers and power supplies receive less power and the light sources attached to them dim down.

You need to be careful to ensure that mains dimmers and mains dimmable light fittings are compatible and produce stable results. For example a leading edge dimmer will not work well with a trailing edge dimmable light fitting. Furthermore low loads from LED light fittings can cause stability issues and different manufacturers systems don't all work well with one another.
